Chicken Meatball and Veggie Soup

There’s something about a rainy day that calls to me – and it sounds a little like this “Soup”. In honor of our recent downpour of much needed H2O I leave you with one of my favorite rainy day suppers.

 

Ingredients:

–       1lb of ground turkey or chicken breast

–       1 ½ cups carrots

–       1 ½ cups celery

–       1 ½ cups potatoes

–       1 beaten egg

–       1 cup chopped onion

–       1 ½ teaspoon minced garlic

–       ½ teaspoon black pepper

–       ½ teaspoon salt

–       5/8 cup Italian seasoned breadcrumbs

–       1 tablespoon vegetable oil

–       4 cups water

–       1 x 32 oz. chicken broth

–       2 bay leaves

 

Making the Meatballs (Chicken or Turkey)

1)   In a large bowl mix ground chicken/turkey with ½ teaspoon salt, ½ teaspoon pepper, breadcrumbs, and 1 beaten egg.

2)   Shape the meatballs and place on a greased cookie sheet.

3)   Bake meatballs at 400F for 15 minutes. Remove and place on paper towels.

 

Soup

1)   In a large pot sauté onions and garlic in vegetable oil until tender and clear.

2)   Add water, broth, carrots, celery, potatoes, ½ teaspoon salt, ½ teaspoon pepper, and 2 bay leaves.

3)   Bring soup to a boil.

4)   Reduce heat and simmer for 15-20 minutes.

5)   Add the meatballs after the first 10 minutes and continue to simmer.
