This is one of my all time favorite sweets recipes! I am sharing this recipe with you all because I have a funny story to go along with it, I think it would be a great, easy sweet treat for the Memorial Day Weekend coming up and every time I make it someone always wants the recipe. This recipe has been in my family for well over 20 years. We have always called this recipe Saltine Surprise because it uses Saltine Crackers, but recently I have seen other variations on Pinterest and it’s called Saltine Toffee Crackers and uses brown sugar instead of granulated sugar like my family’s version or even pretzels instead of the Saltines.
The funny story goes like this: When I was probably 7 or 8 my Great Aunt Julie asked me to copy down the recipe for Saltine Surprise on 8 index cards so she could give them to her friends. While I was copying down the recipe on the first index card I came across the word “sheet,” meaning cookie sheet, I did not think that was the correct way to spell “sheet” because it was not a sheet, like for a bed. So I came up with a better spelling for a cookie “sheet”, I let you figure out the 4 letter cuss word I chose that starts with an S and ends with a T! I went on and wrote 8 index cards using that s-word and proudly handed them to my Great Aunt Julie with a huge smile on my face. She started laughing out loud while she read over them and then soon realized I had done this on all 8 of the index cards! We all had a good laugh and she still gave them out to her friends with the s-word all over it! It has always been a cute and embarrassing story to share when family and friends ask for the recipe.
This is all you need: Saltines, butter, sugar and chocolate chips.
First step is to cover a cookie sheet with Aluminum foil and then layer the Saltine’s salt side up.
Then melt your butter and sugar over medium high heat.
This is what the butter and sugar should look like after it has boiled for 3 minutes.
Pour the butter and sugar mixture over the crackers and spread to cover all the crackers.
Bake the crackers for 8-10 minutes at 350 degrees.
As soon as you pull the cookie sheet out of the over pour the chocolate chips on top to melt.
Spread the chocolate chips to cover the crackers and then place in the freezer or refrigerator.
Once the chocolate has hardened you can break them into small pieces to serve.
Saltine Surprise (without cuss words)
- 1-2 sleeves Saltine crackers
- 1 cup of butter (not the unsalted- it will not turn out)
- 1 cup of sugar
- 1 bag of chocolate chips (I prefer the Hershey’s milk chocolate chips, some prefer the semi-sweet)
- Preheat your oven to 350 degrees and line a large cookie sheet (see I can spell it correctly, now!) with foil.
- Layer the Saltine crackers, salt side up on the cookie sheet.
- Bring the butter and sugar to a boil over medium-high heat. Boil for 3 minutes (a MUST) and stir continuously.
- After the butter and sugar have boiled for 3 minutes, pour it over the top of the crackers and spread it with a spatula to cover all the crackers.
- Bake for 8-10 minutes. It will be bubbly!
- Upon removing the cookie sheet from the oven pour the bag of chocolate chips on top of the crackers and allow them to soften for a few minutes. Once the chocolate is soft, spread it evenly over the crackers.
- Place the cookie sheet in the refrigerator or freezer until the chocolate has hardened and then break into small pieces.
