Grilling season is upon us and what better way to celebrate the season than with an awesome goes-with-everything sauce. It can be used as a dip for tortilla chips, it goes perfectly on fish tacos, grilled veggies, or it can be used as mayo in burgers or sandwiches. It is also the perfect compliment to fresh, summer, cocktails. I found this gem in my Joy of Cooking cookbook, my go to cookbook that I’ve used since our newlywed days. Anytime I have certain ingredients on hand I look through it to find something I could put my own spin on or make with some simple substitutions. This super simple recipe is one that you don’t necessarily have to be exact with the amounts and you could definitely swap out some of the ingredients for a lighter version. Most of the ingredients you may already have in your fridge or pantry.
I absolutely love chipotle (we served chipotle mashed potatoes at our wedding) so when I saw it as one of the ingredients I knew I wanted to try it. The tangy, subtly sweet, and smoky heat is the perfect compliment to any grilled fare or it can be served as a chip and dip starter before the main course comes off the grill. Here is what you need:
1 small 15oz jar of real mayonnaise
1 small 3.5oz can of chipotle peppers in adobo sauce
juice from 2-3 limes
2 cloves of garlic skins removed
1 handful of cilantro roughly chopped
salt to taste
Set up your food processor or blender. In it, pour the mayonnaise, the entire can of chipotle peppers with adobo sauce, lime juice, garlic, chopped cilantro, and a pinch of salt. Blend until smooth and add a little more salt if needed. That’s it! Pour out into your favorite dip bowl or return to the empty mayonnaise jar for storage in the fridge. You can use light mayo or Greek yogurt for a lighter alternative.
